Jerk Chicken on the Beach
Jamaica is a beautiful island with several fantastic resorts to choose from, and the Bahia Principe Luxury Resort in Runaway Bay, is one of them. A tiny bit deeper into the country but totally worth it. This adults-only, all-inclusive, resort has everything you need from excellent service to entertainment, and an array of food options. But there was one place that wasn't mentioned on their list of dining options.
Once discovered, I didn't care too much about what was for lunch. I knew that the resort had this cozy beachside Jerk Hut that served freshly grilled jerk chicken daily. Once the smell of the smoldering charcoal starts to fill the air from the pit barrel, you knew it was almost time to get in line. They cook pounds of chicken to meet the demand but the portion sizes get smaller and smaller as the afternoon wears on. It's best to be one of the early birds...pun intended.
The chicken is dry-rubbed with traditional Jamaican jerk seasoning. It's not too spicy so it's acceptable for all tourists and hopefully all taste buds. If you like heat like we do, they have a housemade scotch bonnet sauce that you can sprinkle on top afterwards. You are also offered the option of a hearty scoop of rice & peas and a slice of hard dough bread. Bite after bite never gets old. The perfect meal in-between the several all-inclusive options you can choose from for your other meals at the resort.
After one such lunch, take a few steps to indulge in a poolside cocktail or layout on the beach and enjoy the view. Both are equally acceptable. This is proof that the simplest moments can bring a whole plateful of joy.
